Green Apple Cupcakes
A moist fluffy cupcake flavored with green apple soda (yeah, the brown on top-ignore it :-p) with fluffy green apple frosting topped with a piece of green apple licorice. Aren’t these cupcakes awesome? Too bad I didn’t make them in time for St. Patrick’s Day because they’re so green, but oh well. Clearly I need to get more with the whole spring/easter thing most bloggers have going on
Ingredients: Cupcakes (Makes 15)
1 cups granulated sugar
1 and 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup green apple soda (I used Jones)
1/4 teaspoon green food coloring
1/2 cup of butter (1 stick), softened
2 and 1/3 cups powdered sugar
1/3 cup green apple soda

Heat oven to 350°F. Grease and line a cupcake pan with cupcake liners, then grease again.
Stir together sugar, flour, baking powder, baking soda and salt in large bowl. Add eggs, buttermilk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in green apple soda (batter will be thin). Pour batter into prepared cupcake tins.
Bake for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool completely. Frost with green apple frosting.
Cream butter until fluffy and very light in color. Mix in the powdered sugar until almost crumbly then add the soda and food coloring. Beat until smooth and creamy. Pipe onto cupcakes.
