Trail Mix Cookies
A big, thick, chewy cookie stuffed with peanuts, mini m&ms, and raisins. In other words, trail mix cookies (or gorp). Want the recipe? Here they are.
Ingredients: (Makes 12 large cookies)
1 cup (2 sticks) unsalted butter, melted
1 cup brown sugar
1/2 cup white sugar
1 egg yolk
2 and 3/4 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons cornstarch
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup mini M&Ms (you can use large if you want, though)
1/2 cup peanuts
1/2 cup raisins
Preheat oven to 350F. Grease two pans and line with parchment paper.
Cream melted butter and both sugars until lightened, or for 5 minutes.
Add eggs and egg yolk, combining thoroughly after each one. Mix in vanilla.
In separate bowl combine flour, baking powder, cornstarch, and salt. While mixing slowly, add the flour mixture to the wet mixture on low speed.
With a spoon, mix in M&Ms, raisins, and peanuts.
Chill for 45 minutes in the fridge.
Using a large ice-cream scoop, drop dough onto baking sheets. Remember, it only makes 12 cookies. Bake for 12-15 minutes.
Cool for 5 minutes and then transfer to a wire rake.
